Walking along the remains of the road towards Frenchmans beach after one of the many storms that battered the islands this past winter the fields were littered with scallop shells bought up by the force of the sea. So many infact it looked like all the scallops had landed on the west coast. Scallop shells have so many uses from decorative to practical. Fill them with salt and pepper and use as part of a table setting, surround an old mirror for a bathroom, or for serving a nice piece of smoked fish.


Clean shell and lightly oil, place a piece of smoked fish with lemon juice and knobs of butter (you can add herbs to the butter) black pepper, pinch of salt and tablespoon of cream. Place on the grill for about five minutes or until the fish is cooked and serve as a starter or part of a main.
