It really is summer when all the hard work of tilling the fields at last begins to show. Seeing the hay drying and the mombresia in full bloom you know it’s august. That bitter sweet month of enjoyment and expectation. The abundance of fresh fruit and veg is mother natures reward.
Here on Aran we have the best of both worlds – calm, peacefulness, and an influx of visitors bringing new ideas. Seasonal produce like the delicious Aran honey from a local beekeeper who’s hives thrive on the multitude of wild flowers. Mna na aran who each friday set up their little stall at the Celtic cross outside The Bar selling home made Breads, Chutney, Relish, and a few crafts in small sustainable quantities.
Our Aran Goats cheese Cais Cabhair Arann is locally made from a herd that is husband humanely. If you are on Aran and see any of the local produce why not buy and or sample some as an addition to your picnic on the cliffs. Additionally you may choose to take some away with you. The Goats cheese is available in our local Spar.
Here is an easy recipe for you to try using Aran Goats Cheese. These Vol au vent are great served with a glass of wine before you sit down to supper.
Vol au vent’s with Caramelized Onions and Aran Goats Cheese.
What you need:
1/5 pounds of red onions very finely sliced
1 ounce of butter
8 tablespoons of balsamic vinegar
5 sage leaves finely chopped
Teaspoon of oil (vegatable or olive)
Salt and Black Pepper to taste
12 small frozen Vol au vent’s
Bake the Vol au vent’s and let cool ahead of assembling. The secret is slowly cooking the onions so they caramelize releasing their natural sugars. In a non stick / teflon skillet melt the butter in oil, add onions, balsamic vinegar, chopped sage leaves, and salt and pepper. Cook over a very very low flame for about 30/35 minutes stirring constantly untill it is reduced down with a glossy appearance and liquid free. Let the mixture cool and spoon it into the Vol au vent topping with a bowl of Aran Goats Cheese. Serve as an aperatif with a glass of your favourite Red or White wine.
