Visitors to our islands are in awe of our barren landscape and often wonder where do we source our exotic produce. The answer is simply our local Spar which is well stocked and Mrs M. can procure any item that is seasonally available like asparagus, an early summer perennial. This is an idea for a quick summer salad.

 

What you need:

a bunch of fresh asparagus

1 large red onion

quarter of a glass of distilled vinegar

2 tablespoons of sugar (white)

Shavings of Parmesan cheese

Dissolve sugar in vinegar and put aside

Chop the red onion into small pieces

Place in a container

Pour the vinegar/sugar mixture over and let stand for 30 Minutes. This cures and pickles the onions, taking the sharpness away.

Chop the asparagus into half inch pieces, discarding the woody bottom

Toss together with onions saving the liquid and serve on a bed of baby spinach leaves with shavings of Parmesan
