As an overnight visitor to the island you may have had “The Fry” which is a Full Irish Breakfast. One of the key components is Black Pudding also known as Blood Sausage, an acquired taste for some.
Black Pudding maybe used as a delicious starter for dinner. The piquant flavor of the pudding with the sweetness of the apples, and a dash of wholegrain mustard and honey will enhance the flavor and surprise all.
What you need:
2 medium red apples
1 black pudding 200grams
2 teaspoons of wholegrain mustard
1 teaspoon of honey
2 tablespoons of sunflower oil
a pinch of salt
Juice of 1 lemon
Peel , core and quarter apples placing apples in the lemon juice to stop them turning brown.
Cut pudding in 4 equal portions and grill on a medium heat for 4-6 minutes turning so each side is cooked evenly. Place apples, oil, mustard and honey in a pan on a medium flame and gently fry until slightly brown but not soft. Remove pudding from grill and place on a place topped with the apples and contents of the pan with mustard and oil and serve.
