After a long and bitter winter one of the first signs of spring along with the primroses are ransoms or wild garlic which is abundant on the island.

While biking along the lower road the salted air is perfumed with the mild scent of wild garlic with their distinctive white flower heads. Ransoms can be used to make pesto in soups or stir fried to accompany grilled fish. Always remember when foraging for ransoms to pick them in an isolated area away from the road and to wash adding a bit of baby bottle sterilize to the water.
